- 2/3 cup (150 ml) dry white wine
- 1 cup (150 g) green olives
- 7 to 9 ounces (200 to 250 g) button mushrooms
- Salt and pepper
- Olive oil or butter
- 1 to 1 1/4 cups (200 to 300 ml) warm water
Instructions
1. Sear the meat
Heat a large Dutch oven with a drizzle of olive oil. Brown the pieces of veal on all sides until golden, about 8 to 10 minutes.
2. Add the vegetables
Add the carrots, sliced onion, and bacon. Cook for about 5 minutes, until the onion turns translucent.
3. Thicken the base
Sprinkle in the flour and stir for 2 minutes to avoid lumps. Add the tomato paste, bay leaves, nutmeg, salt, and pepper.
4. Deglaze
